Most often, the duck is cooked only with apples. But having tried at least once this option of cooking, nobody will be able to refuse it. Poultry meat goes well not only with apples, but also with oranges. Citrus notes give this dish freshness and an unusual aroma. Duck in the oven with apples and oranges: ingredients

To prepare this delicious holiday dish you will need the following ingredients:

  • carcass of a duck - 2-2.5 kg;
  • 2 apples;
  • 1 orange;
  • salt - to taste;
  • black pepper - 1 tsp.

It is advisable to take the bird home, medium size with a thin fat layer. If the duck was frozen, then it must be transferred in advance from the freezer to the lower shelf of the refrigerator at least 14 hours before the start of cooking. Apples in the recipe are used sour or sweet and sour varieties.

Before baking, thawed duck must be pickled. For marinade you will need:

  • soy sauce - 100 ml;
  • orange juice - 120 ml;
  • garlic - 3 cloves;
  • hot mustard - 1 tsp.
  • Italian herbs - 1 tsp.;
  • suneli hops - ½ tsp.

Orange juice must be exclusively natural. One big orange will be enough to squeeze it. Packaged juice from the store will not work in this case.

To make the meat soft, bake the duck in the oven (with oranges and apples as a filling) in the sleeve.

Preparing the marinade for the bird

Before proceeding with pickling, the duck should be washed well in cold water, as well as cut off the neck and sebaceous glands from the tail. You can remove the extreme composition at the wing. With tweezers, remove dark and coarse villi on the skin. Now the duck needs to be rinsed twice with boiling water, after which it can be dried on the outside and inside with a paper towel. So, the bird is ready for pickling.

You need to do this in the following order:

  1. Grate the duck well with salt and black pepper, both inside and outside.
  2. For marinade, combine orange juice and classic soy sauce together. Stir.
  3. Take a 10 cc syringe with a needle. Pour marinade into it and chop the duck on all sides, every 2 cm. This is done so that the bird is marinated not only outside but also inside.
  4. Add the squeezed garlic, spices, mustard to the remaining marinade. Mix well and rub the skin and the inside of the bird with it.
  5. Wrap the duck in cling film, tighten it tightly so that the marinade does not leak. Send the bird to the refrigerator for at least 6 hours, preferably at night.

Now you need to do some fruit work. This must be done immediately before sending the duck into the oven. Wash and cut oranges and apples directly with the peel into 4-6 parts.

Remove the duck from the refrigerator, remove the cling film. In the hole in the bottom of the carcass, place the filling from pieces of apples and oranges. Stab it with toothpicks. Now the duck should be put in the baking sleeve and be sure to fix its free edges with clips. From above, make a few punctures with a needle to release steam. To form a crispy crust, after the allotted time, the sleeve should be cut and expanded, and the duck should be kept in the oven for another 15 minutes, pouring it with the resulting juice. The temperature in this case should be slightly increased to 200 degrees.

Remove the finished duck from the oven, remove the toothpicks and transfer to a beautiful dish. When serving, apply orange sauce to the bird. You can start cooking it while the duck is baking in the oven.

Oven-baked duck with apples, according to the recipe, served with spicy sweet and sour sauce. It is prepared as follows:

  1. Heat butter (10 g) and olive oil (1 tbsp.) In a pan.
  2. Cut a small onion as small as possible.
  3. Fry the onion in a mixture of oils until soft.
  4. Squeeze the juice from the oranges. A total of 150 ml is needed for the sauce.
  5. Pour 50 ml of white wine into a pan with a clear onion. Boil the sauce over low heat until the wine has evaporated.
  6. Pour in 60 ml of chicken stock, 15 ml of table vinegar.
  7. Add 1 tbsp. l honey, a pinch of salt and black pepper. Continue boiling the sauce until the liquid evaporates. It will take about 5 minutes.
  8. Combine the flour (½ tbsp.) With a small amount of water. Stir well so that there are no lumps. Pour the mixture into the pan.
  9. Cook the sauce for another 1 minute. When serving duck to the table, water them with a bird.
